Guacamole for a Big Party

The recipe for this chunky guacamole comes from KJ’s Caribe, a local favorite in Eureka Springs, Arkansas. Owner K.J. Zumwalt is known for his sauces and salsas and the simplicity of this recipe will have you making it again and again.

Ingredients

SERVINGS: Big Party
  • 3 Spanish yellow onions
  • 1 bulb garlic
  • 9 serrano peppers
  • 20 Haas avocados
  • 3 tablespoons garlic powder
  • 2 tablespoons sea salt
  • 1 tablespoon cayanne
  • 2 limes

Instructions

The ingredients listed are for a big party. Cut portions for a smaller group.

Mince the onions, garlic and serrano peppers.

Gently mash avocados in, and then, very lightly and carefully, stir in the spices.

Squeeze two limes over the guacamole.

Serve over greens, and sprinkle with diced red bell pepper or tomato.
